Simple Roasted Mushrooms

Side Dishes

These are super easy yet oh so delicious. I love the deep mushroom flavor that comes out when you roast them. I can eat these by themselves but they're great in pasta, on pizza, toast or anything else you can think of!

  • 1 tsp freshly ground Black pepper
  • 1 tsp dried Thyme
  • 3 tbsp Water
  • 12 oz Cremini Mushrooms, sliced thickly
  • 1/4 tsp Salt, or to taste
  • 1 tbsp Olive oil
  • Preheat oven to 400 F and line a baking sheet with parchment paper.
  • First roast the mushrooms: In a medium mixing bowl, combine the mushrooms, pepper, olive oil, thyme, salt and water and toss well to combine.
  • Spread the mushrooms evenly on the baking sheet and bake for 18 minutes, stirring halfway through baking time. Once they are cool enough to handle, chop them finely and set aside.
