Orange Chocolate Chip Muffins

What a crazy week this has been! Moving is always so stressful. There are still boxes everywhere and the house is in chaos, but luckily I found some time this morning to make a nice homemade breakfast for the first time in 5 days or so!

The first boxes I unpacked yesterday were my kitchen tools, there's only so long I can go without cooking! I whipped up these simple muffins this morning and they were absolutely delicious. I must say that I do miss my own cooking when I haven't cooked in a while. Anyway, hope you enjoy these as much as we did today, so nice to have homemade food again!

  • 1/4 cup Canola oil (non-gmo is best)
  • 2-1/2 tsp Baking powder
  • 1-1/2 tsp Apple cider vinegar
  • 1/4 cup Applesauce (I always use no sugar added)
  • 1/2 cup pure Maple syrup
  • 1/3 cup mini Chocolate chips
  • 1 packed tsp Orange zest
  • 3/4 tsp Orange extract
  • 1-1/2 tsp Vanilla extract
  • 1 cup Whole wheat flour
  • 3/4 cup non-dairy milk (any kind)
  • 1 cup unbleached All-Purpose flour
  • Preheat oven to 350 F and line a muffin pan with liners.
  • In a medium mixing bowl, whisk together the first 8 ingredients. In a larger bowl, sift together both flours and baking powder. Pour the wet ingredients into dry ingredients and mix well with a whisk. Fold in chocolate chips.
  • Evenly distribute batter between 12 muffin tins and bake for 20 minutes, until tops are firm. Let cool for 5 minutes in the pan before transferring to a cooling rack. These taste best once they have cooled completely to room temperature.
