Kale Hemp Seed Pesto

Makes about 1 cup

It's easy to eat your greens when they are as tasty as this pesto! The kale flavor is a bit strong here (not in a bad way!) so it's best to use this pesto in dishes that will be baked because the flavor really mellows out when cooked. I use this instead of tomato sauce on pizza. This recipe makes enough to cover two 12 inch pizzas.

  • 3 oz de-stemmed Kale leaves (about 3 cups tightly packed)
  • 1/2 tsp Sea Salt
  • 2 Garlic cloves
  • 5 tbsp Water, divided
  • 6 tbsp Extra virgin Olive oil
  • 4 tbsp Hemp seeds
  • Preheat a large skillet over medium heat. Roughly chop the kale leaves and transfer them along with 3 tbsp water to the pan. Cook stirring constantly, until kale is softened, about 2-3 minutes.
  • Transfer the kale to a 4-cup food processor. Add remaining 2 tbsp water, hemp seeds, oil, garlic and salt. Blend until completely smooth, stopping and scraping down sides as needed.
