Date Scones

Makes about 15
Breakfast

These scones are the perfect breakfast, not too sweet, very buttery tasting and flaky. We ate these with a nice cup of coffee and my grandmothers homemade Blackberry jam and they were little bites of heaven! I love using virgin coconut oil in my baked goods, they give everything such great flavor, and the coconut milk adds extra richness. Because these are sweetened only with dates they are something you can feel good about eating on a regular basis!

  • 1/3 cup solid Coconut oil
  • 1-1/2 cups Unbleached All-Purpose flour
  • 3 tsp Baking powder
  • 3 tsp Vanilla extract
  • 1-1/2 cups Barley flour
  • 1/2 cup pitted Dates
  • 1 tbsp Flax meal
  • 1-3/4 cup Coconut milk
  • 1 cup pitted Dates, finely chopped
  • Preheat the oven to 400 F and line a baking sheet with parchment paper.
  • Combine the flours, baking powder and flax meal in a medium mixing bowl. Add coconut oil, and work it in with your fingertips until mixture becomes sandy in appearance and texture.
  • Place coconut milk, vanilla and 1/2 cup dates in a blender and blend for a few minutes until completely smooth. Pour into the flour mixture, add chopped dates and mix well with a rubber spatula.
  • Drop dough onto prepared baking sheet using a lightly oiled 1/3 cup measurement. Bake 18 minutes, until golden brown on the bottom. Serve plain or with jam of your choice.
