Cinnamon Vanilla Puffed Cereal

It's been really hard for me to try and find a healthy, low sugar or sugar free cereal that I can feel good about giving to my toddler. Then it hit me - why not make your own, you make everything else! I began to search my cupboard for ideas and came across a few bags of unsweetened grain puffs. These are basically different grains (Millet, Kamut, Rice or Corn) that have been 'puffed' so they are light and airy but there's no added sugar, salt or anything. The only ingredient is the grain itself. When I was growing up, the only cereal my mom would buy were these puffs, we would eat them with peanut butter and honey mixed in for sweetness.

So anyway, I decided to use the puffs as the base for my cereal, and I wanted to make a slightly sweetened version that wasn't sticky so my son could eat it dry as a snack also. Well, it turned out really delicious, light and crispy with a hint of cinnamon and sweetness. It was a huge hit with my son, he was eating it by the fistfuls.

We don't like things crazy sweet in our house so this is pretty mild, but feel free to add more maple syrup if you want it sweeter! And enjoy this multi grain, low fat, naturally sweetened, deliciously easy cereal to make!! I'm so excited about all the different flavor combinations I can experiment with now!

  • 2 cups puffed Rice
  • 1 cup puffed Millet
  • 1-1/2 tbsp pure Maple syrup
  • 1 puffed Kamut
  • 1-1/4 tsp Cinnamon
  • 1/2 tsp virgin Coconut oil
  • 1-1/2 tsp Vanilla extract
  • Preheat oven to 325 and line a jelly roll pan with parchment paper.
  • In a large bowl, combine and millet, kamut and rice puffs. In a smaller bowl, whisk together the remaining ingredients. Pour the wet ingredients into the puffs and mix well.
  • Bake for 12-14 minutes until crispy. Let cool completely before transferring to an airtight container.
