No-Bake Almond Date Truffles

Sweets

These are the kinds of desserts I grew up with! My mom loved dates and healthy sweets, we never had sugar in the house so most of the time dates were what was for dessert! We used to eat a version of these truffles all the time - I can't remember exactly how my mother made them but they were so good. These are sweet, delicious and taste almost exactly like the ones I remember. I am happy I can share one of my favorite childhood treats my with son, who by the way thinks these are candy and goes crazy for them!

  • 2-3 tbsp unsweetened shredded coconut
  • 1/2 tsp cardamom
  • 2 tsp pure maple syrup
  • 1 cup raw almonds
  • 1/2 cup pitted dates
  • 1 tbsp water
  • 3/4 tsp vanilla extract
  • Place almonds in a dry 4 cup food processor and process into tiny pieces. Add dates, vanilla, cardamom, water and maple syrup and process until mixture forms a ball.
  • Using a 1 tbsp cookie scoop form date mixture into 12 balls. Spread the shredded coconut on a dinner plate and roll the balls in it until they are evenly coated. They can be enjoyed right away but store the leftovers in the refrigerator.
